Adriatic Shrimps in Tomato Sauce

So called Shrimps 'alla Buzara' is very popular dish everywhere at the Adriatic coast. Try this great recipe - simple but delicious!

This is a perfect dish especially if you invite your friends to have a dinner and a social event. Just roll up your sleeves (shrimps must be eaten by hands) and dip fresh bread into the tasty sauce to eat it with sweet shrimps meat.

Before you start...

...please read the words below. They are essential for your success in cooking shrimps.

I like cooking a lot, especially sea food. Shrimps are my specialty and the favorite dish. I prepared them many times and on many different ways (BBQ, cooked in red tomato sauce, cooked in white sauce). But even so I like different versions so sometimes I change the ingredients. I use different herbs, add some hot chili, use more garlic instead of onion, add some cognac and so on.

I never count the time when cooking so all the ingredients and the proposed cooking time are approximate values. If you have some cooking experience, I believe that you will know exactly when the dish will be finished. Shrimps don't need lot of cooking - it is important that the sauce has the right density and the taste. That is why I permanently check the taste while cooking and I suggest you to do the same, too. Just enjoy, experiment and follow your heart!

Shrimps alla Buzara

Simple and delicious recipe for sweet shrimps in tomato sauce as used to be done in the Adriatic area

Prep time 15 min  -  Total time 35 min
Ingredients for 6 servings
1,5 kg of Shrimps  • Extra virgin Olive Oil  • 3 big red onions, chopped  • 1 can (approx. 400 mg) of crushed tomato  • 3/4 l white wine  • finely chopped parsley  • salt, pepper, oregano, basil

The real cooking begins early in the morning in a Fish market...

Visit your local Fish market if possible and try to find fresh shrimps. I recommend smaller shrimps (but not too small) if there will be more people at your dinner party - the social event will last longer...
Other possibility: you can use frozen shrimps, too.

Clean the shrimps with brush under the cold tap water and then dry them well. Finely chop red onions and parsley, don' t mix them together as parsley will be added at the very end. Prepare also basil and oregano.


Start cooking in a big sauté pan

Put the olive oil in a large pan and sauté the onion for a few minutes. Add shrimps, salt and pepper and stir them if needed. Don't let the onion turn too dark. After 5 minutes add crushed tomato and 1 dl of wine. Add also oregano and basil and stir from time to time. When the sauce become hot, add the rest of the wine and leave the sauce to boil. Try to stir frequently every few minutes for approximately 15 minutes. Just before the end add parsley - this is the way how it will keep the best, fresh taste.


Serve immediately

Shrimps must be served immediately after being cooked. The best way is to put the pan in the middle of the table so that everyone can take the shrimps and the sauce by himself. Serve with lot of fresh bread to soak up the sauce.


Some additional useful hints...

Put some empty plates on a table because you will need them for the shrimp shells.
Put some bowls with water and sliced lemon to clean your fingers when needed.
Shrimp deveiner and cleaner is useful tool to get some meat out of shrimps' claws.

Well, the only way is a deep look at the pan where the shrimps were served. If the guests are satisfied, the scenery will be something like this one on the picture.

@Tolovaj -> I love the atmosphere on the market. Ljubljana has great fish and fruit market and going there on Saturday mornings is also a social event. You meet friends or colleagues, have ice coffee or chocolate ice cream or cake (well, at least I do) and so on.

I like your tip about starting cooking early in the morning. I have a friend who owns prestigious restaurant and he said this step is most important of all. so he does it personally. Every morning he takes a basket and goes in shopping to find best food for his guests.
I like shrimps too although I haven't try them alla buzara yet. I bet they are memorable experience:)
