How I Use Strawberries

- washed and by the bowlful
- sometimes with cream and a bit of sugar
- sometimes with a bit of sugar just to make juice and with angel food cake and ice cream
- sliced into a salad with baby spinach, slivered almonds and raspberry vinaigrette dressing
- mixed into a fruit smoothie with other fruit
I will continue to search recipes and try them until I have found other useful ways to include strawberries in my diet.
At this point I'm just happy to eat them either whole or cut in half. I don't need sugar or cream, I just love the sweetness of the berry by itself!!

Strawberry Almond Salad
Prep time 65 min - Total time 70 min
Ingredients for 4 servings
1 cup cottage cheese • 1/2 cup nonfat or light sour cream • 1/4 cup honey • 1/2 teaspoon almond extract • 1 pint (2 cups) fresh strawberries • 1/2 pint (1 cup) fresh raspberries • 1/2 pint (1 cup) fresh blueberries • 1/2 cup sliced almonds, dry roasted
Process cottage cheese in a food processor until smooth.
Refrigerate for 8 hours in an airtight container.
With cottage cheese in a bowl; gently fold in sour cream, honey, almond extract.
When it's time to serve, slice strawberries and mix with other berries in a bowl.
Into individual dessert dishes, spoon 1/3 cup berries. Cover each with 2 tbsp of the cream mixture.
Top with sliced almonds.
