Recipe Series: Strawberries in Champagne and Greek Pasta Salad - Easy and Yummy

Are you planning a nice and cozy chamber event at home? Just a few friends coming over, and you don't want to spend too much time in the kitchen, and keep the cost under control?

Or maybe you are hosting a large Valentine's Day event with a lot of different dishes and drinks? Or perhaps you are invited to a potluck style party, and need to bring a dish with you?

Either way - my quick and easy recipes are perfect for this kind of occasion! Strawberries in Champagne will be a true hit to sip throughout the night, or to enjoy it as a light dessert. And my Greek Pasta Salad... It is great to snack on, it could be an appetizer or even become a main dish! Just make some bruschetta to go with, and you are ready to go!

Strawberries in Champagne

The Easiest Cocktail and Adult Dessert Recipe in one (6 portions) - perfect for Valentine's Day!

 

Ingredients:


- 2 lb of strawberries

- 1 cup sugar

- juice from the whole lemon

- 2 glasses of champagne


Out of all of the strawberries choose the largest ones and place them in champagne glasses. Place the rest in the blender, add sugar and lemon juice. Whip it until it becomes smooth. Slowly add champagne, while still whipping. When the ingredients are combined pour the liquid into champagne glasses with the whole strawberries, and serve immediately - preferably with a long cocktail spoon.

Ingredients:

 

SALAD:


- 2.5 cups cooked pasta

- 3 cups fresh mushrooms, sliced

- 15 cherry tomatoes, whole or halved (however you like!)

- 1 cup red bell pepper, cut into strips

- 0.75 cup crumbled feta cheese

- 0.5 cups finely chopped chives

- 3 oz black olives, whole or halved

- 6 oz salami, sliced into strips

Greek Pasta Salad

(4 portions)

 

Ingredients:


DRESSING:


- 0.5 cups of olive oil

- 0.5 cups of red wine vinegar

- 1.5 teaspoons granulated garlic

- 1.5 teaspoons dried basil

- 1.5 teaspoons dried oregano

- 0.75 teaspoon ground black pepper

- 0.75 teaspoons of sugar



Decorate with Fresh Basil!

How It's Done:

In a large bowl, mix the olive oil with the vinegar, garlic, basil, oregano, pepper and sugar. Add cooked pasta, mushrooms, tomatoes, red peppers, feta cheese, onion, olives and salami. Stir well to distribute the sauce. Cover and refrigerate for 2 hours, or leave it overnight. It doesn't get easier than that!

Tip: you can decorate it with fresh basil leaves!
