Recipe Series: Easy Recipe for Upside Down Pineapple Cheesecake

Classic, but very much up to date (and super easy!) recipe for a year-round dessert.

Upside Down Pineapple Cheesecake - what a delicious treat!

Great for Easter, for a Spring picnic with your family, refreshing in the Summer, and it works fantastic as a reminder of warmer days, when it's cold outside. Needless to say: a wonderful treat for any occasion!

Served warmed up or chilled, depending on your taste, it is AMAZING! (I love it straight form the oven, when the cheesecake part is supper fluffy!).

I just baked it this past Easter, and what I loved the most about it, besides the fantastic flavors, was that it takes so little time to be prepared! My husband and I made a "family affair" out of this, so it literally took 10 minutes, and the cake was in the oven baking. When I make it by myself, it takes no more than 15 minutes.

Of course my husband and I ate a piece right away! And even my father in law was impressed with it, and he is very hard to please, when it comes to food.

First: what is an "upside down" cake?

An upside-down cake is a type of cake that is baked in a single pan, then turned over and eaten upside-down.

Usually chopped or sliced fruit: such as apples, pineapple or cherries - and a butter and sugar topping - are placed on the bottom of the pan before the batter is poured in, so that they form a decorative topping once the cake is inverted.

Traditional upside-down preparations include the American pineapple upside-down cake (see my version of that below!), French Tarte Tatin, and Brazilian Bolo de Banana.

Prep time 15 min  -  Total time 75 min
Ingredients for 10 servings
1/2 cup of packed brown sugar  • 1/4 cup of butter  • 1 can of pineapple slices (drained)  • 1 pkg of yellow cake mix  • 2 pkg of Philadelphia cream cheese  • 1 pkg of Jell-O (choose your favorite flavor)  • 2 eggs

Preheat oven to 350 F.

Spray a 6-9 inch bundt cake pan with nonstick cooking spray.

Melt butter in the small pan. Stir it together with brown sugar. Place 5-8 pineapple slices (depending on your bundt cake pan size, and the size of pineapple slices) in the bundt cake pan. pour over the sugar mixture.

Prepare cake mix according to the package directions. Pour half cake batter evenly over pineapple.

Beat cream cheese, Jello-O and eggs in a bowl until smooths. Spread cream cheese mixture gently over the cake mix. Place the remaining pineapple slices on top of the cheese. Pour the rest of cake batter over the pineapple.

Bake 65 minutes.

Cool 5 minutes.

Loosen edges and turn out into a serving platter.


This is one of the easiest cheesecakes I have ever made!
