Bacon and Swiss Cheese Quiche And Gazpacho and Avocado Soup Recipes

Bacon and Swiss cheese quiche served with a gazpacho or avocado cold soup and a salad makes a great meal any time of the day!

Quiche is made with a rich custard of eggs and milk and baked in a crust.

There are so many different ingredients you can use in a quiche. You know they say bacon makes everything better!

If you are looking for healthy try spinach, tomatoes, and peppers and serve with a hot chicken soup or whatever you desire.

To complete the meal serve with your favorite tossed salad, cold or hot soup or fresh fruit.

Salad greens of your choice, tomatoes, mushrooms, sunflower seeds, fresh grated Parmesan cheese and dress with a herb vinaigrette.

Some fruits that are delicious with quiche are honeydew, watermelon, cantaloupe or berries.

A cold soup would be a great accompaniment with quiche also, I have included recipes for a gazpacho and avocado cold soup.

Quiche is a dish that may be served for any meal of the day, from breakfast, brunch, lunch to dinner. This would make a perfect ladies brunch!

Ingredients for Crust

  • 1 cup flour
  • ½ teaspoon onion salt
  • 2 tablespoons butter
  • 2 tablespoon shortening
  • 2 to 3 tablespoons cold water

Instructions for Crust

  1. Mix together in medium size bowl the flour, onion salt, butter, shortening, and cold water; combine the mixture well.
  2. Roll the dough out thin and shape into a 10-inch pie plate.

Tips from Margielynn

  • You can also use the store bought pie crust if you are like me, I do not get along with pie crust, it does not like me!
  •  In other words, I make a lousy pie crust!

Ingredients for Quiche Filling

  • 2 cups, 8 ounces Swiss cheese, shredded
  • 2 cup half and half milk
  • 4 eggs, slightly beaten
  • 1 tablespoon cornstarch
  • 6 slices bacon, cut into 2" pieces
  • 2 tablespoons Parmesan cheese
  • 1 teaspoon chopped chives
  • ½ teaspoon salt
  • 2 tablespoon butter, melted

Instructions for Making Quiche

Preheat the oven to 375 degrees Fahrenheit.

Cook the bacon until crisp. Drain; place in the pie shell.

Place the shredded cheese on top of the bacon.

In a medium size bowl mix together until blended; the half and half, eggs, cornstarch, chives, and salt.

Pour the milk and egg mixture over the meat and cheese in the pie shell.

Sprinkle on the butter and Parmesan cheese.

Bake at 375 degrees Fahrenheit for 40 minutes.

Let stand at least 10 minutes or longer before serving

Tips From Margielynn

  • May substitute for 2 cups of Swiss cheese, 1 cup of Swiss and 1 cup of cheddar cheese.
  • May substitute for 6 slices of bacon, ½ cup ham, chopped.
  • May substitute for chive, green onion tops.
  • For a variation add ½ cup chopped spinach, thawed and drained.

  • 6 fresh Roma tomatoes, chopped
  • 1 red bell pepper, seeded and chopped
  • ½ large cucumber, peeled and chopped
  • 4 green onions, chopped
  • 2 tablespoons vinegar
  • 2 tablespoons olive oil
  • ½ cup water
  • salt and pepper to taste

Instructions

  1. In a blender mix tomatoes, bell pepper, cucumber, green onions, and water, blend until smooth.
  2. Add the olive oil and the vinegar, and blend until mix well.
  3. Season with the salt and black pepper to taste.

Ingredients

  • 3 avocados, peeled
  • ¼ cup green onions, chopped coarsely
  • ¼ onion, chopped coarsely
  • ½ cup fresh cilantro, chopped coarsely
  • ¼ cup fresh parsley, chopped coarsely
  • 2 tablespoons lime juice
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • ¼ teaspoon hot sauce
  • ¼ teaspoon ground cumin
  • 1/4 teaspoon black pepper 16-ounce sour cream
  • 32-ounces chicken broth

Instructions

  1. Place the avocados in the blender and mix until smooth.
  2. Add to the avocado mixture the cilantro, green onions, regular onions, parsley, lime juice, salt, chili powder, hot sauce, ground cumin, and black pepper.
  3. Blend until the mixture is smooth.
  4. Place in a large bowl and stir in the chicken broth and sour cream.
  5. Place in a container with a lid or cover the bowl you mixed in and chill for 3 hours.

  • You may substitute light sour cream for the regular.

I must admit that as a Briton soup is for me essentially hot, for reasons of climate, as Veronica stated.

My favourite quiche is more of a quiche Alsace which is the quiche base with a mountain of lightly fried onions in it . Add the custard and top with gruyere cheese. Serve hot or cold.

I like chilled soup apple and celery is a good one.

Chilled soups aren't quite so well known in England .... ha.... for obvious reasons ! namely our climate !

You can do either, whichever you like! I just put some of my favorite cold soups, both hot and cold go well with quiche! Sometime I just like a salad! Have a great day Frank!
