Are you looking for an easy chicken leftover recipe? Leftover chicken is just so versatile and here's two very different left over chicken recipes!

One of these chicken recipes is based on Coronation Chicken, which was created for the Coronation of Queen Elizabeth II - you can see the story below. However, the reason why I like it is because it is a great way to use up leftover chicken AND it is wheat free.

This fast, easy recipe is one of many wheat free recipes that I make regularly as a result of reducing my what intake on the advice of a homeopathic doctor.

A great recipe for leftover chicken

Do you know the history behind why the recipe for Coronation Chicken was invented?

Chef Rosemary Hume was retained to oversee the banquet following the coronation of Queen Elizabeth II in 1953 and Florist Constance Spry suggested a recipe that contained cold chicken with a curry cream sauce. This recipe became known as Coronation Chicken.

It is thought that the inspiration for the suggestion came from a dish known as Jubilee Chicken, which was prepared for the Silver Jubilee celebrations of Queen Elizabeth's grandfather, George V who, in 1935, was commemorating 25 years as King. This dish mixed chicken with mayonnaise and curry and today, it is the curry and mayonnaise version of the dish which is generally referred to as Coronation Chicken.

How to make Coronation Chicken

Easy leftover chicken recipe

All you need is:

Some cooked chicken, it can be left over from roast chicken, baked chicken legs or thighs, chicken breasts

Mayonnaise - the amount depends how much chicken you have

Curry powder - use 1 teaspoon of medium curry powder for each tablespoon of mayonnaise

Note: The curry flavor develops more quickly if it is melted into a smooth paste with some warm water


All you do is:

Mix the curry paste into the mayonnaise

Mix in the chicken

Note: the curry flavor develops the longer the mayonnaise is left before adding the chicken



If you like raisins or sultanas you can also add these to the curry mayonnaise before you cover the chicken

Serving Suggestions for Coronation Chicken

Coronation Chicken can be served as an appetizer or a main meal

Coronation Chicken can be served:

with cold boiled rice, just mix it in

with cold, cooked pasta to make a pasta salad

with a baked potato

as a dip with chips (we call them crisps in the UK), corn chips, sliced pitta bread or sliced raw veg such as carrots or celery

Chicken with Mushroom Sauce

Another easy left over chicken recipe

You can use any left over chicken for this recipe. However, because this recipe requires you to reheat the meat, it is very important that you heat it thoroughly.

To reheat chicken and prevent it from drying out, simply wrap the chicken in foil, put in an oven proof dish and place in a pre-heated oven at 350 degrees F (180 C or gas mark 4) for at least 30 minutes.

Make sure the chicken is piping hot and heated right through.

While the chicken is heating, make the mushroom sauce as per the directions you can find at Recipe for Mushroom Sauce.

Serve the sauce over the chicken with vegetables of your choice or plain, boiled rice.

The coronation chicken will make a good sandwich when served with lettuce and tomatoes.

I love Chicken Curry, or how my Mum used to do the leftovers, cooking the broken up carcase and meat from the Sunday Roast, with stuffing, vegetables, and loads of gravy, and it used to taste so good.

Cold chicken with chips and pickles is good too. For those in the USA, it doesn't mean potato chips and gherkins, it means homemade chips (steak fries) with pickles (pickled onions, pickled red cabbage, piccalilli). Yumm :)

Both of these recipes are too saucy for me. I am not a big fan of cream sauces. I would just take the leftover chicken and make a sandwich out of it, or dip it into a mustard and eat with fresh vegetables or cooked vegetables.

I just made a chicken pot pie with leftover roasted chicken. I used phyllo dough for the crust. It was excellent! Coronation Chicken sounds wonderful!

I just have to tell you - the Coronation of Queen Elizabeth in 1953 was the first thing I ever saw on a television set. I was amazed. And I remember sitting with my classmates watching in awe.
