Easy Pumpkin Soup Recipe

Pumpkin Soup is yummy if you like pumpkins your going to enjoy this soup. You can even serve it up at your next Thanksgiving dinner, or make it part of your Halloween party.

Do you love pumpkin recipes with fresh pumpkin as much as we do, here you'll find a way to make your favourite soup using a simple recipe. Your guests will love this pumpkin soup anytime of the year, but I like to serve it up as a holiday treat and it always makes for an easy to prepare dish for my Halloween or Thanksgiving party. This easy to follow pumpkin soup recipe is great when served in a baked pumpkin bowl, which is what I do for less cleanup.

Preparation for Pumpkin Soup

Follow these easy pumpkin soup directions and you'll have your guests wanting more


  • 1 medium size pumpkin or you can use (butternut squash) if you prefer
  • 8oz cream cheese 
  • Red or green bell peppers
  • 3 medium potatoes (diced)
  • 1 large sweet onion (diced)
  • Chicken stock or water
  • 1 stick of butter
  • Salt and pepper

Sautee diced onions and bell peppers in the bottom of the soup pot that your going to use to cook the soup in. Once they are soft and semi-transparent add your diced potatoes and pumpkin or butternut squash if you'd rather not use pumpkin.

Cover with as much chicken stock and water that it takes to cover all of the vegetables for even cooking. Cook on medium until all the veggies are soft and fall apart when you poke a fork into them. 

Using an emersion blender or an electric blender start blending until everything is a smooth texture then place the soup back into the pot and add your 8oz of cream cheese. Stir the cream cheese until it melts blending all of it throughout the soup creating a thicker smoother texture. 

Taste:  You'll need to add more cream cheese if your soup has a pasty taste until you have the acquired taste for you and your family or friends if serving at a dinner party. 

The size of your pumpkin or butternut squash with the potatoes can change the taste slightly so try modifying the taste by the quantity of cheese you useyou'll be able to change it to a more pleasing taste. Then add the salt and pepper to taste although here in my house we cook without salt so eliminate it if you want. 

Always turn down the heat to low so that it won't burn and cook for another 30 minutes.

Pumpkins are simple vegetables with only 26 calories per 100 grams, the pumpkin has virtually no cholesterol but yet it's high in fiber. If you like the taste of pumpkin then your in for a treat and not only is it good for you, the pumpkin can be used as a weight loss vegetable. Let's not forget that it also contains minerals and vitamins along with anti-oxidants. 

Not only is the pumpkin good for you so are the seeds, loaded with fiber like the pumpkin, making them a great source for a healthy heart. Along with making soup from the pumpkin, you can also make pumpkin soup bowls to serve your yummy soup in. But did you know that there's more you can make with a pumpkin? You could make a smoothie ( we have a recipe coming soon), you can bake the pumpkin and use it as a side dish. Or why not just steam the vegetable and have that added benefit of knowing that it's just plain good for you.
