Hummingbird cake is a deliciously moist cake. It is not for hummingbirds, it is for us dessert craving cream cheese loving people!

The cake is filled with crushed pineapple, banana, cinnamon, coconut, and pecans. It is frosted with a scrumptious cream cheese frosting. Hummingbird cake is a very elegant cake for any occasion, such as birthday, anniversary, holidays, potluck or any special get together.

It would also make a lovely gift to someone for any occasion. Just wrap in cellophane and tie with a beautiful bow and it will make an awesome presentation! Make sure you include the recipe, I am sure the receiver will want to make it!

Mom made hummingbird cake often for our family, and it did not last very long! Every day was a special occasion at our house.

Hummingbird Cake Recipe: Moist and Delicious Dessert

Ingredients for 15 servings

  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 3 cups flour
  • 2 cups sugar
  • 8-ounces crushed pineapple, undrained
  • 1 ½ cups Canola oil
  • 3 eggs
  • 1 ½ teaspoons vanilla extract
  • 2 cups diced banana
  • 1 cup pecans, chopped
  • 1 cup coconut, shredded


  1. Add each of the ingredients into a large bowl.
  2. Do not use an electric mixer.
  3. Mix the ingredients using a large spoon; stir only until well blended.
  4. The cake may be baked in a greased and floured tube pan at 325 degrees Fahrenheit for 1 hour and 20 minutes or in two 3 x 9-inch cake pans, baked at 350 degrees Fahrenheit for about 25 minutes, do not over bake, it will dry the cake out and you will have missed a scrumptious cake.
  5. Let the cake cool while making the cream cheese frosting.

Cream Cheese Frosting Recipe


  • 8 ounces cream cheese, softened
  • 16 ounce boxed powdered sugar
  • ½ cup margarine softened (1 stick)
  • 1 teaspoon vanilla extract
  • ½ cup pecans or walnuts, chopped


  1. Combine the cream cheese and the margarine in a medium mixing bowl.
  2. Cream the mixture with an electric mixer until smooth.
  3. Add the powdered sugar gradually to the creamed mixture.
  4. Add the vanilla extract, mix until it is creamy.
  5. Frost the cooled cake.
  6. Top the cake with the chopped nuts or put in the frosting if you desire.

The name was given to cake with no explanation, you had to guess why it was named hummingbird cake.

This looks wonderful. noticed it before but haven't done much baking over summer. I am particularly impressed with the cream cheese frosting recipe I will definitely be dong that on carrot cake.
