Old-Fashioned Banana Nut Cake With Cream Cheese Frosting

Old-fashioned banana nut cake is moist and filled with pecans and topped with a scrumptious cream cheese frosting! Use up your over-ripe banana for this delicious dessert!

Banana nut cake makes me think of my Grannie Dockal, she always made this delicious dessert for family get togethers.

The bananas and sour cream in this recipe makes this cake very moist. Make sure your bananas are very ripe, otherwise not much banana flavor will come through.

You may used any type of nuts you desire, I like pecans, walnuts are good as well. This would make a great dessert for a pot luck, family gathering and the holidays.

Ingredients

  • 4 small very ripe bananas, mashed
  • 1/2 cup butter, 1 stick
  • 1 cup sour cream
  • 2 eggs
  • 2 teaspoons baking soda
  • 2 cups flour
  • 2 cups sugar
  • 1 ¼ cup pecans, chopped

Instructions

  1. In a large mixing bowl cream the sugar and butter.
  2. Add the eggs and the bananas, stir well.
  3. Add the sour cream, stir well.
  4. In another bowl, sift the flour and the baking soda and add to the mixture.
  5. Mix in 1 cup of the pecans, use the remaining ¼ cup for sprinkles on frosting.
  6. Pour the batter into a greased tube cake pan, 2 round layer cake pans or a 9-inch x13-inch pan.
  7. Bake at 325 degree Fahrenheit for about one hour.
  8. Frost the cake with the cream cheese frosting and sprinkle with the chopped nuts.

Cream Cheese Frosting Is Good on Just About Anything!

I love the rich creamy tangy taste of cream cheese frosting. You can use on carrot, pumpkin, red velvet, banana, pineapple, chocolate, zucchini, and cinnamon cakes, just to name a few. The list goes on and on! Yummy topped on many bars and cookies! 

When the grand kids were young every Christmas we made cut-out brown sugar cookies and topped them with yummy cream cheese frosting. Of course we had to sample a few or a lot!

 

Ingredients

Making Cream Frosting
  • 8 ounce packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 cups confectioners' sugar
  • 1/4 cup butter, softened

Directions

  1. Add the cream cheese and the butter to a large mixing bowl; beat with an electric mixer on high speed until fluffy, about one minute.
  2. Add the confectioner's sugar, 1 cup at a time beating until smooth, depending on the consistency, more or less confectioner’s sugar may needed.
  3. Add the vanilla extract and beat until mixed.

Makes about 2 2/3 cups.
