Adaptable Pork Chops Recipe
Easy to prepare then just leave it to cook
Being a busy work at home Mum, while I enjoy cooking, I do like to prepare tasty meals that are easy to cook and don't need watching over all the time. This Pork Chops recipe is very easy to prepare and as it is a one pot recipe, there's not much else that needs doing once it is in the oven.
You can also cook it with additional ingredients such as apples or celery.

I love Le Creuset Bakeware because you can use it to cook and serve. It is also very hard wearing and dishwasher safe too.
To cook my one pot pork chops you will need:
- A shallow oven proof baking dish that will allow the pok chops to be spread out in one layer
- Sharp knives
- A cutting board (bamboo is the most environmentally friendly)

Ingredients for One Pot Pork Chops
4 pork chops or pork steaks
750g new potatoes, skin on, cleaned and sliced
500g tomatoes (home grown is best!)
leaves from 3 or 4 rosemary sprigs, finely chopped
2 cloves of garlic, chopped
Freshly ground salt and pepper
Salad and/or green peas to serve
Preheat your oven to 200C or 400F/Gas 6/Fan oven 180C or 350F
Put one of the shelves in the middle
Drizzle some olive oil over the base of a shallow oven proof dish
Arrange the potatoes and tomatoes over the base of the dish in layers, sprinkle with rosemary and garlic plus seasoning as you go
Finish with another drizzle of olive oil over the top and bake for 30 minutes
Sit the pork chops on top and sprinkle with rosemary
Return to the over for 35 - 45 minutes until the pork and potatoes are cooked
Serve with a green salad and/or peas
Safety tips for cooking with Pork
Make sure the pork is thoroughly cooked
As with chicken, Pork is one of those meats that needs to be completely cooked before consuming.
No preparation of the meat is needed for this recipe but do ensure that during the preparation process, that you wipe down any surfaces with bacteriacide and wash throughly any equipment that comes into contact with the raw meat before you use it for anything else.
Variations to the standard recipe
I have cooked this recipe many times and vary it sometimes by adding apple or celery.
If you wish to add apple, simply take two large cooking apples, peel and slice (not too thinly) and add into the potato and tomato layers before cooking.
To add celery, simply take a couple of stalks of celery chop into 1 inch pieces and add to the potatoes and tomatoes, again before you cook.
