Recipe for Mushroom Sauce

This recipe for Mushroom Sauce is fast and so easy to make. It can be used on a variety of fish and meat dishes and even makes a great vegetarian pasta dish.

We did not evolve to consume wheat, so it is no wonder that many people either have an allergy to wheat or they may experience symptoms that wheat does not rest easy with their digestion. Two of the biggest problems caused by eating wheat is fatigue and bloating. I suffered from both, but it was not until I consulted a Homeopathic Doctor that I was advised to reduce my intake of wheat.

These days I do sometimes eat something that contains wheat but the overall reduction has really benefitted my health.

This Mushroom Sauce Recipe is just one of a series of wheat free recipes that I use regularly.

Mushrooms Sauce

A versatile accompaniment for fish, meat or pasta

This quick easy dinner recipe can be used to make a plain meat or fish dish a lot more appealing. I use this sauce on fish, pork or chicken. You can even use it on pasta or rice for an even faster dish!

Quick to prepare and fast to cook, this mushroom sauce can also be adapted by adding a splash of white wine, to make a more luxurious accompaniment, whether cooking for the family or entertaining.


Equipment needed to make mushroom sauces

My fav stainless steel pans and bamboo chopping boards

I prefer to use stainless steel pans in the kitchen because the heat is transferred evenly across the base of the pan and they are so easy to clean and keep shiny as new.

Bamboo is a renewable crop, making it some of the best eco friendly kitchen equipment and I love the durability of Le Creuset Stoneware, which I often use to serve my Mushroon Sauce dishes.

To make this Mushrooms Sauce Recipe, you will need:

1 fry pan

A chopping board

A sharp knife

Sharp scissors for snipping the Chives (I find this easier than chopping with a knife)


Food Safety

Remember to always use separate chopping boards and knives for preparing vegetables and meat

When reheating food, make sure it is piping hot before serving, but in the case of this Mushroom Sauce, if you want to prepare in advance, cook the mushrooms and keep until ready and then add the cream at the last minute.

Ingredients for Mushroom Sauces

Just cook some mushrooms and add the cream

Allow 2 oz of mushrooms per person

Small amount of butter for frying

Double cream


Freshly milled black pepper



Note: allow more mushrooms if the sauce is to be served with just pasta or rice

Preparing the ingredients for Mushroom Sauce

Fast and easy recipe

Slice the mushrooms, approx one eigth of an inch thick

Either chop the chives with a sharp knife or snip them with scissors

How to make a Mushroom Sauce

Heat the butter in the pan

Gently fry the mushrooms until just cooked

If they have created some juice, strain this off or it will discolor the cream

Add the chives

Add enough cream to make a sauce that is not too runny

Heat through until just bubbling

Season with freshly ground black pepper

Serve over meat, fish or pasta

Serving Suggestions for Mushrooms Sauce

Try these variations

You can serve Mushrooms Sauce in a variety of dishes. Just cook the main dish first and add the Mushroom Sauce just before serving:

Grilled pork chops

Baked Chicken Breasts or Legs

White fish

Baked Salmon

Plain pasta

Plain boiled rice

Add a splash of white wine to make a more luxurious sauce

Add finely chopped onion for more "bite" and a less subtle flavor

You could also replace the chopped chives, with chopped parsley

I told you I was craving this! I went right out and got some mushrooms and double cream and made this sauce, poured it over some chicken legs, and baked them covered. OH MY GOODNESS was it delicious! With some fresh green beans as a side. Wonderful and SO EASY!
