Slice the potatoes, onion and mushrooms - keep them "chunky"
Break the eggs into a bowl and beat them - a fork will do the job nicely
Add about a tablespoon of water to the eggs
Season the beaten eggs with freshly ground salt and black pepper
Melt a small amount of butter and a tablespoon of olive oil into the fry pan
When the oil mix is hot add the onions and soften slightly
Remove the oions from the pan with a slotted spoon and put into the oven proof dish
Add the potatoes and fry until tinged brown (but don't overdo it) and then add to the onions
Fry the mushroom until almost cooked and add to the potatoes and mushrooms
Sprinkle over the grated cheese
Cover the vegetables and cheese with the egg mixture
Cook under the grill until golden brown
When cooked, add some grated pecarino cheese
Serve with salad
Suitable for Vegetarians, this recipe is also suitable for people on a Wheat Free Diet.
For a more luxurious (and more calory enhanced!) version, add 2 tablespoons of cream to the beaten eggs before you pour them over the vegetables.
