This simple Spanish Omelette Recipe is so easy to make and fast to cook. I particularly like to make my version in the Summer and it is a great way to use up cooked potatoes left over from another meal.

I also like serving Spanish Omelette because the whole meal is cooked in one dish - less washing up!

How to make a Spanish Omlette

A fast, easy recipe

My Spanish Omelette Recipe is best served in a "rustic" type of dish - it reminds me of the Mediterranean holidays I have had in Spain, Greece and Italy. Make sure your dish is oven and grill proof, because it is going to be exposed to some direct heat.

You will need:

Mixing bowl

Chopping board

Sharp knife

Cheese grater

Fry Pan

Slotted spoon

Oven to table serving dish

Note: when buying or replacing worn out kitchen equipment, please consider buying bowls and utensils made from bamboo. Bamboo is one of the most eco-friendly natural resources!

Ingredients for Spanish Omelette

Qualities can be varied depending on your preference

For my Spanish Omelette Recipe, I tend to use one egg per person - this recipe will serve two people and you can vary the ingredients - for example increase or reduce the mushrooms

2 eggs

4 oz Mushrooms

1 small onion

4 oz cooked potatoes (skin on)

4 oz grated hard cheese, cheddar is ideal

2oz Pecarino cheese

A little olive oil and butter for frying

Freshly grated salt and black pepper

I usually cook my easy Spanish Omelette under the grill but you can bake it in the oven, which will take longer.

Turn on the grill to a medium to high heat, so it heats up while you are preparing the ingredients

How make Spanish Omelette

Preparing this Quick and Easy Dinner Recipe

Slice the potatoes, onion and mushrooms - keep them "chunky"

Break the eggs into a bowl and beat them - a fork will do the job nicely

Add about a tablespoon of water to the eggs

Season the beaten eggs with freshly ground salt and black pepper

Melt a small amount of butter and a tablespoon of olive oil into the fry pan

When the oil mix is hot add the onions and soften slightly

Remove the oions from the pan with a slotted spoon and put into the oven proof dish

Add the potatoes and fry until tinged brown (but don't overdo it) and then add to the onions

Fry the mushroom until almost cooked and add to the potatoes and mushrooms

Sprinkle over the grated cheese

Cover the vegetables and cheese with the egg mixture

Cook under the grill until golden brown

When cooked, add some grated pecarino cheese

Serve with salad

 

Suitable for Vegetarians, this recipe is also suitable for people on a Wheat Free Diet. 

For a more luxurious (and more calory enhanced!) version, add 2 tablespoons of cream to the beaten eggs before you pour them over the vegetables.

Pecarino is a hard Italian cheese, made from Ewe's milk. It is strong tatsing compared to other cheeses like cheddar

Jimmie I tend to slice it - if it falls apart and is more like a casserole underneath, then it has not been cooked for long enough :)
