Do you include uninsured motorists coverage on your car insurance even though your state has a mandatory insurance law? I'm trying to cut expenses, but I'm not sure if it's wise to cut that.

Cut expenses somewhere else... Let's say you are involved in an accident and the other side is at fault. If they are uninsured/underinsured, you will want an insurance policy that will cover your losses, both personal injury and property losses, which could be substantial. You are simply not going to be able to recover from that uninsured/underinsured driver and you will be stuck will the whole bill, and possibly the inability to pay for any needed medical services. That risk is not worth the savings, in my humble opinion.
