Microwaved Eggless Marble Cake - Chocolate-Vanilla in 15 minutes

Microwaving and Grilling your Cake

The traditional baking in OTG can be a little time consuming. This recipe takes advantage of the microwave, generally available in all the modern kitchens. The cake's preparation is far less time consuming, it is fluffy even though it's eggless, and doesn't involve any kind of egg substitute.

However, microwaving is not same as baking. Some important differences include -

1. The layer of your batter in baking (microwaving) dish should be as thin as 1/2 inch for uniform baking.
2. There won't be a brown layer on the top of your cake, you might want to try grilling after the cake is microwaved.
3. Depending upon your microwave brand, batter consistency etc. the time for microwaving and grilling might vary, so you'll have to be a little careful, and check frequently for the first few times you try the recipe. Even 30 seconds of extra baking can convert your cake to brick.

All You Need For Your Cake


Prep time 5 min  -  Total time 10 min
Ingredients for 4 servings
2 Cups Maida / All Purpose Flour  • 2 Cups Sugar, You can add a little less, if you did prefer the cake less sweet  • 1 Cup Milk Powder, I prefer Amul or Everyday, but any milk powder would be fine  • 3 Tablespoons Drinking Chocolate Powder, I use Cadbury. You can replace this with molten chocolate  • 1 ½ Cup Milk  • 1 Cup Malai/Cream + Ghee (Indian Refined Butter), The quantity would vary with creaminess of milk, and also the amount of creaminess you prefer  • ½ teaspoon Vanilla Essence  • ½ teaspoon Baking Powder  • ½ teaspoon Meetha Soda / Sodium Bicarbonate  • 1 teaspoon Lemon Juice  • Pinch or two Salt

Take the Maida / All purpose Flour, Sugar and Milk powder - all the dry ingredients and mix them properly. Now add Ghee/Malai. You might have to experiment with the quantity a little, depending on how thick the milk is. When I use Amul Full Cream milk (although it's toned), I just add a tablespoon of cream. Now slowly pour milk, and start to mix/beat the ingredients.

Add the Vanilla Essence, baking powder, Meetha soda, Lemon Juice and salt, and beat nicely for a minimum of 3 minutes.

( For a plain vanilla cake, pour the batter in a microwave safe dish. It’s advisable to have not more than half inch thick layer for microwaving. I've noticed that, a thick layer cake wouldn't be as great in texture and fluffiness.)

Now take about half a cup of the batter in a separate bowl, add the drinking chocolate powder and mix well.

Grease a microwave safe broad glass dish. Add about two tablespoons of Vanilla Batter, and one spoon of Chocolate batter. Repeat, adding the chocolate batter not just in centre, but elsewhere too, otherwise you’ll get symmetric layers. (My husband says he loves abstract/random layers)

Put your dish in the microwave at full power for about 3 minutes. Check with a toothpick - if it is still sticky, bake for another minute and check again.

Optional: Preheat the grill for five minutes and put the dish back for 2-3 minutes, keep checking from outside through the glass.

I do not try to invert my glass dish like we would do in case of traditional baking. Grilling gives you a nice thin brown layer on the top, so just take a knife and get your pieces. I didn't bother with the creamy decorations this time, but you might want to do that too.

Your marble cake is ready to savor! Enjoy.

Baking can be a Lot of Fun

Especially in a Microwave

Although it's a little intimidating if you've never tried it, baking in a microwave can be a lot of fun. It's hassle free and fast. Most importantly, little variations here and there can give you completely different flavors. Instead of Vanilla Essence, you can use something else and get a different cake altogether. For example, use a fruity flavor, like strawberry, and then add some pieces of Strawberry, and instead of chocolate get pink color layers/stripes with edible color.

Yeah, people appreciate absence of eggs due to many reasons. Being a vegetarian, vegan or allergies are just some of them.
