Quick & Easy Vegetarian Dinners

And you don’t have to be a whizz in the kitchen to follow the three easy vegetarian recipes below. You don’t even have to follow them! Mix and match the ingredients until you come up with your own masterpiece. My favorite Friday night dinner after a long week is HAT. Read below to find yours!
HAT - Bruschetta with Halloumi, Avocado, and Tomato
INGREDIENTS:
4 ciabatta rolls or 1 loaf ciabatta bread
3 tomatoes
2 avocadoes
1 block halloumi cheese
Butter or margarine to spread
Cracked black pepper to taste
Preheat oven to 350 degrees F.
Cut ciabatta rolls in half or loaf of bread into slices and spread with butter or margarine. Cut halloumi into thick slices. Take avocado out of its skin and mash with a fork. Slice tomatoes.
Place ciabatta bread in oven and grill or bake until crisp or desired texture. Fry halloumi pieces on low to medium heat until lightly browned, turning halfway so both sides are cooked. When the bread is finished cooking place pieces on a plate and spread with mashed avocado. Top with sliced tomatoes and finally halloumi cheese. Add cracked black pepper to taste. Enjoy! Serves 4.
BCP – Baguette, Camembert, and Pesto
INGREDIENTS:
1 French baguette
1 tub basil pesto with cashews and parmesan
1 circle camembert cheese
Cut desired amount of fresh baguette into pieces. Spread pesto. Top with camembert slices. There- easy as 1-2-3!
Roasted Vegetable and Feta Salad
INGREDIENTS:
4 cups chopped vegetables of your choice- some options are carrot, pumpkin, sweet potato, zucchini
2 tablespoons olive oil
½ cup sundried tomato with cashew and parmesan dip
½ bag fresh or frozen spinach
½ cup crumbled feta cheese (more if you love cheese!)
Cracked black pepper to taste
Preheat oven to 350 degrees F.
Chop vegetables in food processor. Toss vegetables in large bowl with oil. Evenly place on cooking tray and bake for 30-40 minutes until soft, turning halfway. Remove from oven and move to bowl. Stir in sundried tomato dip. Add feta and stir. Add cracked black pepper to taste. Serves 4.

Nice, I'm a vegetarian. I find it easier to eat vegetarian as both my daughters are vegetarians too, we eat a lot of raw foods, nuts, veggies and fruit. Great recipe ideas for a nice vegetarian meal. I will be taking advantage of these. Thanks :)K
