That is true but cockles were not the food of the wealthy in Lancashire so i would assume it was omitted. Cream was available on any farm.

This cockle recipe contains cream and nutmeg, the latter being at one time very expensive, thugh it became cheaper as time went on. This was therefore to be seen as a recipe for someone with a bit of cash.
