Delicious and Healthy Orange and Chocolate Cake Recipe

The best way to make someone’s day even more special is to bake them a homemade cake from scratch. Usually cakes are not good for you and are high in calories, but this special cake recipe that I’m about to share with you not only tastes absolutely amazing, but is also healthy surprisingly good for you. No more guilt! You can bake your cake and eat it too! The best part - It contains chocolate!

List of Ingredients

  • 2 whole oranges and an extra orange for orange rind
  • 200g or 7oz of dark chocolate and 100g or 3.5oz of milk chocolate
  • 270g or 9.5oz of almonds plus extra almonds for the topping
  • 4 room temperature eggs
  • 3/4 cup honey
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

 

Cake Preparation

Step 1: Cook 2 oranges for 1 and a half hours or until they are done. 

Step 2: Place whole cooked oranges (with peel) in a food processor and blend until smooth.

Step 3: Put 270g or 9.5oz of almonds in a food processor and blitz them down.

Step 4: Preheat oven to 180C or 356F and grease your pan. I use a round metallic cake pan.

Step 5: In a bowl mix 4 room temperature eggs, add 3/4 cup honey, add 1 teaspoon baking soda, 1/2 teaspoon salt, almond mixture & add orange mixture to that at the end.

Step 6: Place the mixture inside the pan and bake for 40-50 minutes depending on your oven.

Step 7: Once it's done, let the cake cool for an hour.

Step 8: Combine the 2 chocolates together and melt them down. Add Orange rind to the melted chocolate. While the chocolate is still hot, layer it and evenly distribute it on top of the cake.

Step 9: Add additional chopped almonds on top of the topping.

Step 10: Place it in the fridge for a couple of hours for an even better cake.
