Apple cakes are delicious in any form, but this particular version adds extra benefits to the ordinary apple goodness: it's quick, budget-friendly and virtually impossible to get wrong, even for total beginners. Apple cake lives in many reincarnations and I freely admit that some may be more fanciful than my humble recipe.  Yet, there's one thing which makes my version a winner in most cases:  it is probably the quickest apple cake recipe I have ever come across.  I managed to whip it up yesterday while cooking my dinner and I didn't even burn my pork chops :)  No, seriously, preparing the cake takes about seven minutes, from cracking the first egg to pouring out the batter.  If you're stuck for time or simply don't feel like spending hours in the kitchen, it's THE recipe. 

Luckily, the speed of preparation doesn't mean that the finished cake is any less smashing taste-wise.

Prep time 7 min  -  Total time 47 min
Ingredients for 20 servings
1 cup sugar  • 1/2 cup vegetable oil  • 3 eggs  • 1 tsp soda bicarbonate  • 1 1/2 cup flour  • 2 big apples, cubed  • 1/2 cup chopped walnuts  • grated rind from one orange  • 1/2 tsp cinnamon  • 1/2 tsp allspice  • vanilla extract

Just... mix it all together!
You'll probably be better off if you start with beating sugar and eggs until fluffy, and then work through the list above, but I'm guessing that if you simply dumped all the ingredients into a bowl and then mixed them, it would still be all right. I promise to try it one day and let you know if it works :)
In my most recent cake, I've used three apples, and it still was delicious. I plan to substitute almonds for walnuts next time. And maybe mess around with spices. You see, once you have your batter, you can play around with the ingredients. Don't forget to let me know how it works if you do!

Once your batter is ready, pour into a biggish square baking tin and bake for about 40 minutes in 180 degrees.

Ovens vary, so, as Gandalf would say - always follow your nose :).

Gluten free apple cake

The very first time this cake was baked in my kitchen, flour was substituted with its gluten free equivalent.  It wasn't really my show - I had guests with special dietary requirements - and to be quite frank, I expected the result to be, well, weird.  I wasn't sure if gluten free flour even rises so I guess I thought I'd be served some alien food in the end.

How wrong I was! 

If I was given a gluten free and 'normal' versions of the cake in the same time, I couldn't possibly tell you which is which.  No difference at all, both are fluffy and tasty. 

Feel free to adjust the recipe to your own dietary needs.

I also love simple, love apples. I'm glad you tried it with gluten-free and shared with us that it came out great. Gives me the confidence to try.

I like simple recipes and great results. Your recipe is very similar to one I know and there is also a version with millet porridge instead of flour. I think walnuts are the key to success!
