Festive Meatloaf

This ground beef roast is traditionally served on the day after Christmas Day.

December 26 or Boxing Day is a holiday in most countries. In Austria, it is called Stefani Day, which gives this traditional meal its original name 'Stefani Meatloaf'. It is of course a delicious recipe all year round.

Different variations

Meat loafs or ground meat roasts are relatively simple meals and can be prepared in a lot of variations. Different kinds of meat or vegetarian style, like ground soy meat, can be be used as well as various types of fillings. One suggestion is to add one or two hot dogs lengthways next to the eggs. For a heartier taste add thinly sliced bacon strips to the filling and cover the roast after about 45 min baking time with additional bacon strips. Or try your own version (examples are tofu sausage, or just eggs, feta cheese and spinach, etc.) of this versatile recipe.

It can be served with rice, vegetables, any kind of potatoes; a very good fit are mashed potatoes with roasted onions and Brussels sprouts as side dish. The roast has a great flavor also when not warmed up. It gives delicious leftovers or seconds, but is not particularly freezer friendly. The pickles tend to get mushy when thawed and the hard cooked eggs, especially the egg white changes structure and gets all watery.

Prep time 30 min  -  Total time 120 min
Ingredients for 4 servings
1.2 lbs ground beef or pork, or half and half  • 2 cups of milk  • 1 egg  • 3 cups of bread crumbs  • margarine or EVOO  • pinch of salt  • pepper  • 3/4 tsp of each of the following:  • thyme  • rosemary  • marjoram  • parsley  • garlic powder  • basil  • sage  • cumin  • chervil  • For the stuffing:  • 4 hard boiled eggs  • 3 pickles, sliced lengthways  • optional about 15 thinly sliced bacon strips

Mix ground meat, milk, one egg, bread crumbs, and all spices in a bowl.


Put a layer of bread crumbs on a wax paper or foil (so the mass will not stick to it) and place the mass on it. Roll it into a rectangular shape and to a thickness of about half an inch.


Boil eggs and slice pickles lengthways


Put sliced pickles and hard boiled eggs on it. For a more hearty taste, you can put a layer of thinly sliced bacon strips under the pickles!


Fold the edges and completely enroll the filling.


Grease a 12 x 18 in cake pane. Remove the mass from the foil and place it into the pan and butter it.


Preheat the oven to 430 deg F. Put it into the preheated oven. Frequently (about every 10 min or so) pour the margarine and a little bit of water onto the roast.
After 30 min reduce the heat to 400 deg F. Leave it in the oven for about another 50 to 60 min and keep pouring the gravy on the roast.
