Mom's Corned Beef Patties Recipe

When my Mom said she was going to prepare Corned Beef Patties for dinner, my taste buds rejoiced.

I have to admit there are a lot of recipes for Corned Beef Patties but the way my Mom made her version, it was heavenly. Now you may think I am totally biased since it is my Mom I am talking about and maybe it is true but my taste buds loved the way she made it. Taking the first bite and have the patty literally melt in your mouth. It was not uncommon for us to beg my Mom for some more.

Watching her mixing the ingredients and how effortlessly she made it look, I was amazed at how easy it is to make. The recipe calls for only 5 ingredients. Most recipes I have seen calls for whole potatoes to be boiled and then mashed, onions to be chopped and salt and pepper to be added for seasoning. If this is how you want to male it then feel free to find another recipe and prepare it that way but I feel my Mom's way is cheaper in the end.

5 Ingredients Only

Every now and then I would watch my Mom prepare this meal and I asked her what ingredients were needed.  I was surprised at how easy it was to make.  Basically you only need 5 things. Can Corned Beef, Onion Soup Mix, Instant Mashed Potatoes, Eggs and Oil.

I have started to make this meal for myself and I have tried to prepare it the same way my Mom did and in this recipe I have named the products I use but you can substitute for other brands.  I am not sure if Libby's Corned Beef is available in you area but I will only use that brand since my Mom always did.  Palm brand Corned Beef is cheaper where I live but it contains oil and although I have never used it, I am afraid it will make the recipe soggy.

 

Mom's Corned Beef Patties

  • 1 3/4  cups Prepared Instant Mashed Potatoes
  • 2  12 oz. cans Libby's Corned Beef
  • 1  packet Lipton's Onion Soup Mix
  • 2  eggs
  • Oil for cooking

In a medium size pot prepare the mashed potatoes according to directions on the box.  It does not matter what brand you buy, just make sure there are no flavorings added, just plain mashed potatoes.  Some boxes will let you make less or more than 1 3/4 cups but try to prepare at least that much.  After it is done remove from the stove and let it cool.

In a large bowl, add the 2 cans Corned Beef and cut it with a fork to break it up.  Add the packet of Onion Soup Mix and add the 2 eggs.  Make sure you wash and dry your hands before doing the next step.. Pour in the mashed potatoes making sure it is not too hot cause you will mix everything together by hand.  You can use a spoon but I feel if you use your hand you will blend the ingredients together more better.

Wash your hands and dry then grab a skillet about 9-10 inches (22.8-25.4 cm) in diameter and pour oil until the bottom is covered.  Heat the oil on medium heat and with both hands start shaping the mix into patties.  I usually make small round patties but use your own judgment on how large you want your patties to be.  After you prepare about 7, with your hand, slowly put the prepared patty in the oil one by one, making sure you do not burn yourself.  While it is cooking shape the rest of the mix into patties.  If the mix starts to stick to your hands just run water over one hand and then rub them together and continue.

With a spatula lift the bottom of the patties that are cooking to see if it is brown.  Turn each patty over and if you have not completely formed the mix into patties then do the rest.  Wash your hands good and dry then grab a plate and place paper towels over the plate and when the first batch of patties are finished, with the spatula scoop up the patties and place on the paper towel. With your hands place another batch of patties into the skillet and repeat till all are cooked.  You will probably have to pour more oil into the pan during the process.  When you are finished you can enjoy your meal.

 

Disclaimer:  I had lost my Mom's recipe some time ago but I remembered how she made it.  I tried using the same recipe you read and when I was done I had made it the exact same way she did.  If after you make this recipe and it is not to your taste by all means you can tweak it to your liking.  Remember, this is how my Mom made it and everyone's taste buds are different.  I hope you will enjoy this version of Corned Beef Patties.

Call me a fickle eater but I hate Can Corned Beef. My Mom used to make other meals using it and I hated it but the ironic thing is I LOVE Corned Beef Hash. Go figure.
