When it comes to eating breakfast I hate eating the same thing every day. That is why I let my creativity out and come up with delicious new breakfast recipes. The breakfast recipe that you will find below is for an omelet but not just any omelet. It is an avocado omelet with dried cranberries. Not only is this breakfast recipe quick and easy to make, but it also requires few ingredients, and is both delicious and nutritious. You can't go wrong with that.

How to Make Avocado Omelet with Cranberries

Ingredients for 1 serving
Avocado omelet with cranberries requires very few ingredients...  • 1 ripe avocado  • 2 eggs  • dried cranberries (handful)  • cooking oil (canola oil or other)  • salt  • dried parsley flakes or dried basil  • This makes for one serving. If you want to make this for two people simply double the quantity of each ingredient.

Step 1

Wash the ripe avocado, cut it in half and remove the pit. Then take a spoon and scoop out all of the avocado into a bowl. Next, mash the avocado with a spoon, potato masher, or any other utensil.


Step 2

Take out two eggs (white or brown), crack them into the bowl with the mashed avocado, add a pinch of salt, and mix together. Then add a handful of dried cranberries and mix again. Make sure you mix the ingredients well. If you want to get even more creative you can add roasted sesame seeds to the mixture.


Step 3

Pour cooking oil into a skillet and place over medium heat. Once the skillet is heated pour the egg/avocado mixture. Let the mixture cook for one minute and then flip it over with a spatula and cook for another minute. If you prefer scrambled eggs simply turn the mixture with a spatula for one to two minutes.


Step 4

Once the eggs are done cooking remove them onto a plate and garnish with dried parsley flakes or dried basil. You can even add fresh dill if you'd like. Then make yourself some toast with butter and enjoy with a pickle or fresh tomato on the side.

Making Your Unique Avocado Omelet with Cranberries

You can add other ingredients to the omelet besides those that I have mentioned above. Don't hold back and be creative.

You can fry some bacon or pork fat and then pour the egg mixture over it.

Or you can fry some tomatoes, onions, and bell peppers together and then pour the egg mixture over it.

Whatever your taste buds crave you can add it to the omelet. Don't worry it will not ruin the taste of the omelet in any way.

Now just because this is a breakfast recipe no one said that you have to eat this only during breakfast. You can eat this for lunch or dinner and at any time during the day. It will surely satisfy your hunger.
