Jamon Iberico or Iberian ham is one of the most sought after Spanish foods. In order for it to be authentic, it must come from a special region in Spain. The Spanish government carefully protects this national treasure. Jamon Iberico has it's unique moist and nutty flavor because the pigs are allowed to roam over the Spanish countryside eating as many acorns as they want!
Matt and I fell in love with this unique Spanish ham while we were visiting Spain. Every bar we stopped in served it. We had never tasted anything like it. When we got home we were disappointed that we couldn't find it in the United States. Recently companies have begun to import Jamon Iberico. We have served it at several special family gatherings and everyone else has loved it as well!
