I like simple cooking - fresh basic ingredients (local, if possible), some salt, black pepper, wine and selected herbs. I like Mediterranean taste, so my favorite herbs are basil, oregano, rosemary, parsley, mints, thyme and marjoram. Wine, extra virgin olive oil, tomato, lemon, capers, pistachio, onion, garlic - I rarely use anything else. OK, maybe cinnamon and honey. And that's it!
Goat Ribs with Mediterranean Herbs and Sweet Vegetables

Easy to made and delicious recipe for goat ribs, served with sweet roasted vegetables.
Before you start...
Don't worry - for this delicious food you won't need all the above ingredients. Keep it simple, just use some of them, as suggested below. Trust me, that will be more than enough to taste the Mediterranean spirit! Here is one more hint: try to get ribs of young animals - the meat will be softer!
I believe this is a perfect meal for some rainy spring day when you can't use your BBQ...
Goat Ribs with Mediterranean Herbs and Sweet Vegetables
Prep time 15 min - Total time 45 min
Ingredients for 4 servings
8 goat ribs • 1 dl extra virgin olive oil • 30 g butter • selected herbs (oregano, marjoram, rosemary, thyme) • black pepper and salt • 0,5 dl white wine • 1 red onion • 5 big carrots • 1 red pepper • 1 green pepper • 1 big eggplant • 2 green zucchini (small) • 1 chili (or 2, your choice)
Goat ribs - basic preparation
Put some extra virgin olive oil in a pan and then lie previously salted ribs in it. In a separate pot put the rest of olive oil, butter (which is rarely used in Mediterranean food) and crushed herbs and slightly warm this mixture. Spill the mixture over the meat, add some black pepper and put this pan aside for at least an hour - so that the ribs will absorb some herbs and butter flavor.
Bake the ribs in the oven
Put the pan into cold oven and start heating it up to 200 degrees (Celsius). After 15 minutes set the oven's temperature to 180 degrees and bake the ribs for the next 30 minutes. And that's it! In those thirty minutes you can prepare and saute sweet vegetables to have them served with ribs.
Prepare the vegetables
I usually prepare all the vegetables right after the first step described above and don't wait for the ribs to be put into the oven. But it's more important that you remember this - you must peel the eggplant - otherwise the vegetables will have some bitter taste (so there would be something wrong with the title - Sweet vegetables - right?). After peeling the eggplant just slice all the vegetables so that you will create thick sticks (about 5 cm long). The onion can be thinly chopped. Don't mix the vegetables together - the sort order for later use will be important as some vegetables need to be cooked more than another!
Sauté the vegetables
Put the olive oil in a large pan and sauté the onion for few minutes. First add peppers and carrots, stir and sauté for next few minutes. Than add wine and salt and put the rest of the vegetables, stir and cook for next 15 minutes (or less if you like it 'al dente').

I agree, Tolovaj, diet is just one part of the health where we can actively participate. Our free time activities and lifestyle can participate, too. But unfortunately in most cases we can't choose the place of living and the stress which surrounds us.
They say Mediterranean diet is healthiest of all, but maybe it is not only a diet, maybe it is lifestyle with less stress than in some other areas and positive view on life. I have never tried goat ribs with Mediterranean herbs. They sure look tasty!
