How To Make Homemade Yellow Cake Batter

This tutoral will tell you how to make yellow cake mix from scratch as well as homemade cocolate frosting.
Homemade Goodness
I like to make as many things from scratch as I can these days. With all the GMO`s and ingredients I can`t seem to pronounce on the labels, it just makes me feel like I`m making a difference when I cook or bake from scratch. My daughter entered the age of teenagedom on the 22nd of this month and I wanted to bake her birthday cake from scratch, and my kids won`t accept store bought frosting so I make that too. Following are the ingredients and instructions for doing both.
Procedures
Preheat your oven to 350 degrees.
Grease and flour pan(s). I used a 13x9 inch rectangular, but you can also use 3, 9x1 1/2 inch rounds. If using the rounds, it`s easier to get the cakes out once it`s time to cool them if you spray the bottom of them with no-stick, line the pans with wax paper, and spray the no-stick once again on the wax paper.
Combine the dry ingredients in a large mixing bowl and mix well.
Measure the 1 1/4 cups of milk in a 2 cup capacity measuring cup and then add vegetable oil to make it come up to the 1 1/3 cup mark.
Add the oil mixture, butter, and vanilla to the dry ingredients and mix for 2 minutes on a med to medium-high speed.
Add the eggs and continue beating for 2 minutes, scraping the bowl as necessary.
Pour the batter into the prepared pan(s).
Bake at 350 for 20-25 minutes or until an inserted toothpick comes out clean, or until the cake springs back when touched lightly in the center.
Cool the cake on a wire rack for 15 minutes, remove from pan(s), and cool completely before frosting.
Ingredients
Yellow Cake
2 1/4 cups unsifted, all purpose flour
1 1/2 cup granulated sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
1 1/4 cups milk
Vegetable oil
1 stick butter, softened, NOT margarine
1 Tablespoon vanilla extract
3 large eggs
Ingredients
Chocolate Frosting
4 cups powdered sugar
1 stick butter, softened
1 Tablespoon vanilla
1/2 cup milk
Procedures
Measure the powdered sugar into a bowl big enough to accomodate all of the ingredients. Add the butter, vanilla, a little milk, and mix. Add a little more milk and mix. Repeat the process until you have a nice, creamy, delicious frosting. If you like frosting that`s a little less thick, just add more milk until you get the consistency you desire.
