The wonderful aroma of bread baking in the oven is one that I can't seem to enjoy enough. The aroma stirs appetites and spreads to every nook and cranny of the house. By the time the bread is done, hungry eaters cannot wait any longer to taste the goodness.

Strawberry Banana Nut Bread is a joy to make and even better to eat. Fresh strawberries, bananas and toasted nuts make this bread moist and full of a variety of tempting flavors. This is the kind of bread that can be eaten alone, with nothing more than a cup of tea beside it.

If you decide to serve Strawberry Banana Nut Bread with a meal, it is quite tasty with a hot bowl of soup or a crisp salad. The sweetness of the bread goes so well and balances with a savory dish. Feel like breakfast? Try toasting a slice and spread with butter or cream cheese for an "over the top" taste treat.

Ingredients and Directions for Strawberry Banana Nut Bread


Prep time 15 min  -  Total time 60 min
Ingredients for 10 servings
1 cup bananas, mashed  • 1/4 cup butter, melted  • 1/4 cup vegetable oil  • 3/4 cup sugar  • 2 eggs, slightly beaten  • 1 tsp baking soda  • 1/4 tsp. salt  • 1/4 tsp. cinnamon  • 1 1/2 cups all-purpose flour  • 1/2 cup toasted walnuts (see below)  • 1 1/2 cups sliced strawberries

Preheat oven to 350F.
Prepare a 9 X 5 inch loaf pan with cooking spray.
In a large bowl cream together bananas, butter, vegetable oil, sugar and eggs.
In a small bowl stir baking soda, salt, cinnamon and flour.
Add to large bowl with wet mixture and combine.
Fold in walnuts and strawberries.
Pour into prepared pan.
Bake for 45-50 minutes or until a toothpick comes out clean.
Let cool, remove from pan and slice.

How To Toast Walnuts for Strawberry Banana Nut Bread

Toasting nuts before adding them to breads or cakes brings out their best flavor and it's very easy to do.. The toasting doesn't take long but beware since sometimes it's difficult to judge time with variations in oven temperatures.  Watch them constantly, it only takes a few moments to go from toasted to burned. This simple toasting recipe can be used for any type of nut for added flavor.

Directions:

Preheat oven to 375F.

Spread walnuts on a small baking sheet. Bake for 4-5 minutes, just until walnuts begin to brown.

I have not added strawberries to my banana nut bread but you can bet I will now. I would have to have a slice of this fresh out of the oven, before it cools!
