No Bake Berry Cheesecake

A delicious, easy to make, no bake berry cheesecake recipe. Berries are flavorful, full of fiber and low in calories. Cheesecake, of course, is not low in calories. Serve this cheesecake with one of these 4 refreshing berry recipes listed below.
Berry Cheesecake
Berry Cheesecake Ingredients
- 1 ½ cups graham cracker crumb.
- ½ stick of butter, melted
- 2 tablespoons sugar
- 4 packages Philadelphia Neufchatel Cheese, softened
- ½ cup sugar
- 1 package (12 ounces) frozen mixed berries (strawberries, blueberries, blackberries and rasberries)
- 1 (8 ounces) tub Cool Whip Lite Whipped Topping, thawed, divided
- 13x9-inch baking pan
Berry Cheesecake Directions
- Line the baking pan with foil. Extend the ends of the foil over the sides of the baking pan.
- In a small bowl, mix the graham cracker crumbs, melted butter and 2 tablespoons of sugar; pour the mixture into the prepared pan and press firmily. Put the pan in the refrigerator while you prepae the filling.
- In a large bowl, add the Philadelphia Neufchatel Cheese and 1/2 cup sugar; beat the mixture with an electric mixer on medium speed until blended.
- Place the frozen mixed berries in a bowl; smash them with a fork.
- Stir the berries into the cheese mixture.
- Gently stir in 2 cups of Cool Lite Whipped Topping; spoon over the crust.
- Cover and refrigerate for 4 hours.
- Before cutting the cheesecake, remove it from the pan using the foil handles.
- Cut the cheesecake into pieces and top with the remaining whipped topping before serving.
- Optional: Garnish with fresh fruit (strawberries, blueberries, blackberries) and / or strawberry syrup.
Store leftover cheesecake in the refrigerator.

- 1/2 cup frozen mixed berries
- 1 cup milk
- Pinch of sugar (optional)

- For a sweeter drink, add more sugar.

- 1 cup orange juice
- 1 banana
- 1 1/2 cups frozen or fresh mixed berries
- 1 cup vanilla or plain yogurt
- Place all the ingredients in a blender; blend until smooth
- Add a pinch of sugar if you want more sweetness.
Black Berry Smoothie
- 1 1/2 cups frozen blueberries
- 1 cup frozen blackberries
- 1 cup vanilla or plain yogurt
- 1/2 cup grape juice
- Place all the ingredients in a blender; blend until smooth.
Very Berry Smoothie
- 1/2 cup strawberries
- 1/2 cup raspberries
- 1/2 cup blueberries
- 1 cup strawberry yogurt
- Place all the ingredients in a blender; blend until smooth
