Buying Mung Beans
It's best to buy organic mung beans and buy them in bulk to save money.
Regardless of where you buy mung beans you will save money on this detox as mung beans, like most beans, are very affordable and go a long way. This soup is so delicious you won't let these beans go to waste. In fact if you are going to be feeding other family members you might want to consider buying an even larger quantity. I bought enough for myself the first time I made this soup and my daughters loved the soup too.
Green Mung Beans
Green mung beans look a lot like tiny black eyed peas only smaller and green.

I ran out much quicker than I expected. I found myself running out to buy more and now keep a large air tight container filled with mung beans as they are a great addition to many dishes. We love mung beans.
You want to buy organic green mung beans as organic is always the best choice. You can find them in the bulk section of your grocery store. I buy them at my local organic market. Most grocery stores carry them in the section where you find those large bins side by side with the pull down handles releasing the product into bags you but at the bottom opening. This is where you find the bulk value. Plus you will want a large quantity on hand.
Mung Bean Soup
A great weight loss and detox soup you will love to enjoy anytime.
Prep time 60 min - Total time 60 min - 156 cal/serv
Ingredients for 6 servings
1 cup Dried Green Mung Beans • 1/4 tsp. Cumin • 1/4 tsp.Coriander Powder • 1/2 tsp. Fresh Ground Sea Salt • 1/2 tsp. Mustard Seed • 1/4 Hing (found in Indian groceries) • 1 Bay Leaf • 1/2 tsp.Turmeric • 1 tbsp.Sunflower Oil or Ghee (I prefer ghee) • 1 1/2 tsp.Fresh Ginger • 1/2 tsp. Fresh Garlic • One Fresh Lemon
Making Mung Bean Soup
Measure 1 cup dried mung beans, pour into pot rinse with water several times until water becomes clear. Allow beans to set over night in 2 liters water.
Next day, pour water off and add cups clean water cook on stove top on medium heat until reaches a boil. Once reaches boil cover with lid and turn heat down to medium to low. Takes @ one hour to cook. Cook till desired texture, do not over cook.
After beans have been cooking for 45 minutes prepare the remaining ingredients.
Crush fresh garlic and chop fresh ginger root.
Prepare, measure and add all ingredients (except ghee and mustard seeds) into holding dish.
Heat oil or ghee in saute pan to low medium adding 1/2 tsp. mustard seeds.
When Mustard Seeds start to pop add Hing, Bay Leaf, Turmeric, Cumin Coriander, Ginger, Garlic and a pinch of Black Pepper. Mix all ingredients, do not burn, once mixed well turn heat off. Add remaining ingredients allow to steep for five minutes. Remove from heat serve with fresh squeezed lemon .
Three Day Mung Bean Fast
Simply put, eat this delicious and filling soup provides you with mega nutrients and is super filling.
On the three day fast you simply eat as much of your mung bean soup as you want. Drink lots of water and green tea to help with the cleansing process and to keep you hydrated. Eat a bowl of soup with fresh squeezed lemon on top as much as you want and be prepared to be amazed, I mean really amazed. Be certain to have plenty of mung beans on hand as you really can eat it all day long everyday for three days and loss weight. You may find yourself eating a lot more soup than you imagined you could. This is fine, eat all you want.
Double the Recipe
This soup is so good you can easily double the recipe by adding twice the simple ingredients.
I started with this recipe but quickly moved on to doubling it as I go through it in a short time. I enjoy eating mung bean soup as I'm a busy working Mom who often doesn't like to take a lot of time preparing food. I store the soup in the fridge after I make a batch in the morning. I take out a cup sized portion and micro wave it, add a fresh squeeze of lemon (sometimes red hot sauce) and enjoy. I've even been known to eat this for breakfast.
Do Mung Beans Cause Gas
Because mung beans are easily digested and easy on the stomach they are far less likely to cause gas than any other bean.
Soaking beans over night releases the gas causing agents. You may notice a bit of foaming in the water, this is the gas causing agents being released. The spices added to this mung bean soup makes it even more digestible therefore causing no gas. Some people are more pron to gas than others this should lessen once you clean your intestine of all the gas causing irritants lining your intestine and bowel.
