I LOVE crepes/pancakes!
by colonelle
Traditional french crepes are perfect breakfast. My story with crepes and favorite recipe. Enjoy!
I just love crepes!
Crepes are my favorite breakfast. No doubt about that. My favorite way to prepare them is to spread chocolate butter on crepe, put whipped cream and fresh strawberries on it. Finger licking good! But instead of choco butter or cream You can choose whatever filling you can imagine. That's the best thing about crepes! You might use sweet cheese mass, melted fudge mass, pudding or fruit cream. It's up to You!
-----------------------------------------------------------------------------
Here is my favorite recipe for traditional French crepes.
What we need for ingredients:
1 cup of flour
2 teaspoons of brown cane sugar
1/4 teaspoon of salt
3 eggs
2 cups milk
2 tablespoons of melted butter (or olive oil)
Directions:
Mix together flour, salt and cane sugar and put it aside. In a large bowl, beat eggs, add milk and mix it together with an electric mixer. Add flour mixture to eggs and milk until smooth; stir in melted butter (or just add olive oil).
Heat a lightly oiled frying pan over maximum high heat. Put the mixture onto the pan, using about 3 tablespoon for each crepe. Tip and rotate pan to spread batter as thinly as possible. Brown on both sides and serve hot.
Filling, as I wrote before, whatever You want:)

Crepes or pancakes?
Did You know pancakes are not exactly the same as crepes?
Main difference is that crepe is much more thinner than pancake. And the ingredients and their proportions are little bit different for pancakes. Here are ingredients for pancakes:
2 cups of flour, sifted before measuring
2,50 teaspoons baking powder
1/2 teaspoon of salt
1 egg
1,50 cups of milk
2 tablespoons of melted butter
2 teaspoons of brown cane sugar
As you can see baking powder is added here. It makes batter thicker and finished pancake is also thick and fluffy, so it can't be rolled and filled with filling. You can put cream and additions on top of it. Frying is basically the same.
As an addition you to batter you can use little pieces of fruits to make it more fancy.
