This may be more of a dessert; However for a holiday brunch i I think this would make a nice treat.
What's your favorite Way to start the Day
Everyday Muffin Batter
Makes 10-12 muffins.
14oz all-purpose flour
1/4 cup granulated sugar
1oz baking powder
1/2 tsp salt
1 large whole egg
6oz milk
1/3 cup vegetable oil
Instructions:
Combine dry ingredients well - flour, sugar, baking powder and salt.
Mix wet ingredients - egg, milk and oil then add to dry ingredients.
Stir until just moistened. Do not over mix. {hand mixing recommended}
Grease or line muffin tins with paper baking cups.
Fill each about 2/3 full.
Bake at 400 degrees F for about 20-25 minutes.
For Other flavors:
Add 1oz fruit for - fruit flavored muffins (blueberry)
Add 1oz chocolate chips for chocolate chip muffins

A Sunrise Sandwich Completes Me
a quick breakfast meal
1. Start with 2 slices of Bread. or split an English Muffin
2. Two Eggs fried or scrambled as you like. or 1 Microwave Egg Patty
3. One Breakfast meat. I would say sausage but ham does just fine
4. Cheese (2)slices. what sandwich isn't better with cheese
5. you'll need (1)sautee pan or skillet. only if you want to toast things up a bit.
For beginners I'll say toasted is best but not necessary.
All you need to make this beauty Traditionally is the bread cheese and meat but add in a little egg and watch this treat soar. I guarantee the kids will love it and so will you.
the Complete Breakfast Muffin
For a little extra time, You can Grab and Go
Prep time 15 min - Total time 45 min
Ingredients for 12 servings
1 3/4 cups AP Flour • 1/3 cup Rye Flour • 2 tsp Baking Powder • 1/4 tsp Salt • 1 Tbsp Light Brown Sugar • 1/3 cup smoked Ham -- finely chopped • 1/2 cup Swiss Cheese -- shredded • 1 lg Egg -- lightly beaten • 1 cup Milk • 1/4 cup Vegetable Oil • 3/4 tsp Spicy Brown Mustard • 1/2 tsp Worcestershire Sauce • 1 or 2 drops Tabasco sauce
Preheat Oven 400 degrees
Combine first 5 ingredients in a large mixing bowl;
Stir in ham and cheese.
Make a well in center of mixture.
Combine egg and next 5 ingredients
Add wet mix to dry ingredients stirring just until moistened.
Spoon into greased muffin pans, filling 2/3 full.
Bake at 400 degrees for 22-25 min.
Remove from pans and serve immediately.
Yield: 1 dozen muffins.
Note: recipe also works well with - 1/3 cup cooked bacon chopped - instead of ham

Doughnut Muffins
First the Mix:
- 1 3/4 cp flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1/3 cp oil
- 3/4 cp sugar
- 1 egg
- 3/4 cp milk
Then the Coating:
- 1/4 -1/2 cp butter, melted
- 1/3 cp sugar
- 1 Tbsp cinnamon
Some Directions
- Preheat oven to 350 degrees and grease a muffin tin.
- Combine flour, baking powder, salt, nutmeg and cinnamon in a medium bowl.
- Combine oil, sugar, egg and milk in a large bowl. Add dry ingredients and stir only to combine.
- Bake at 350 degrees for 15-20 minutes.
- As the muffins are baking, melt butter in a small bowl. In another small bowl, combine the sugar and cinnamon.
- Shake muffins out of the muffin tin while the muffins are still hot.
- Dip muffins in the melted butter and then into the sugar and cinnamon mixture. Place on a wire rack and allow to cool.

Simple Bran Muffins
Prep time 12 min - Total time 30 min - 126 cal/serv
Ingredients for 60 servings
Bread Flour 2-1/3 lbs • Baking Powder 2-1/2 oz • Sugar 1 lb • Milk Powder 2oz • Salt 1oz • Butter/ or Shortening 8oz • Molasses 6oz • Cinnamon 1tsp • Eggs, whole 3 each • Water 1Qt • Bran Flour 4oz • Raisins 1lb
Sift together dry ingredients - bread flour/ baking powder
Using Creaming Method, combine all the ingredients except the raisins and bran flour.
mix in the bran flour and raisins.
Scale batter into greased tins.
Bake at 400degrees until done.
Remove from pans & serve warm or at room temp.

How about a Chocolate Chipper Muffins
preheat oven 375 degrees
mise en place:
4oz Butter
2 Eggs
1 pound Flour
.5 Tsp Salt
10oz Sugar
4oz Milk
2 Tsp Baking powder
8oz semisweet chocolate chips
mixing - alternating creaming method
On slow speed, cream butter and sugar.
Add eggs one at a time until fully incorporated.
Sift dry ingredients and add alternating with milk.
fold in 8oz of chocolate chips,to finish.
Fill muffin cups high and sprinkle with coarse sugar(optional).
Bake @375 degrees
for 25-30 minutes.
Remove from pan carefully.
Tips to Help Your Baking
Warm Pralines n Cream Muffins
Prep time 18 min - Total time 22 min - 220 cal/serv
Ingredients for 12 servings
1/2 cp Brown sugar, firmly packed • 1/3 cp Margarine or butter • -- softened • 2/3 cp Milk • 1 each Egg • 1 tsp Maple or vanilla extract • 1 cp Quaker Oats, uncooked • -- (quick or old-fashioned) • 1/2 cp All-purpose flour • 1/3 cp Whole wheat flour • 1 tbsp Baking powder • 1/2 tsp Salt (optional) • 3/4 cp Chopped pecans -- divided
Mix - Creaming Method
Heat oven to 400 degrees F.
Line 12 muffin cups with paper baking cups or lightly grease bottoms only.
Combine brown sugar, margarine and cream cheese until soft.
Incorporate milk, egg and maple extract; mix well.
Add combined dry ingredients and 1/2 cup pecans.
Bake 20 to 22 minutes or until golden brown.
Let muffins stand a few minutes; remove from pan.
Serve warm.
Muffins may also be frozen -
To freeze muffins: Wrap securely or seal in zip-lock containers label and freeze.
To reheat muffins: Unwrap; microwave at HIGH about 30
seconds per muffin. (depending on microwave time may vary)

Triple Chocolate Muffins
Prep time 15 min - Total time 35 min
Ingredients for 6 servings
1 stick (1/2 cp) Margarine or Butter • 3 oz Unsweetened or Bittersweet chocolate • 2 1/4 cp Flour • 1 tsp Baking soda • 1/4 tsp Salt • 1 cp Buttermilk • 1 cp Sugar • 2 each Eggs • 1 tsp Vanilla • 6 oz Milk chocolate chips • 6 oz Semi sweet chocolate chips • 1 cp Toasted walnuts, chopped
Slowly melt butter and unsweetened chocolate.
Meanwhile blend sugar, eggs, buttermilk, and vanilla.
Beat until smooth. Sift flour, salt and baking soda together.
Add to egg mixture to chocolate mixture and blend well.
Add flour mixture and beat until smooth.
Fold in choclate chips. Grease muffin tins well.
Fill each cup 2/3 full with batter.
Bake at 375 deg for 20 to 25 minutes.
These tend to be habit forming when served with cold milk.

Prep time 35 min - Total time 55 min
Ingredients for 12 servings
• 1 small super ripe banana • • 1/4 CPunsweetened apple sauce • • 1/2 Tsp cinnamon • • 1 Tsp vanilla extract • • 1/2 Cp quick cooking gluten free oats • • 1 Tbsp walnut halves and pieces • • 2 Tbsp raisins; Chocolate Chips may Be substituted
Grease and Line 12 muffin cups - set aside or if you prefer you can use small casserole dish (9x12)
For topping: (optional)
maple syrup and more fruit/nuts for topping
1. Preheat oven to 350.
2. Mash banana, and mix with apple sauce, cinnamon, and vanilla until combined.
3. Add in oats, and mix.
4. Finish with walnut pieces and raisins and lightly stir.
5. Spray a small baking dish or ramekin with non-stick spray.
6. Pour batter into ramekin or casserole dish, making sure to press down with a spoon so it's tightly packed.
7. Bake for 30 minutes; (I recommend 20 minutes on the bottom rack, and the last 10 minutes on the top rack)
8. Remove from oven, and either eat straight out of dish, or allow to cool for 10 minutes before using a knife to cut around edges and flip over so the deep dish cookie falls out.
9. Top with maple syrup or fruit if you like.
