Spaghetti is a tradition in many households. Boil the noodles, heat a jar of sauce and throw on a few meatballs. Simple, quick but not fancy. When we want the full Italian experience, we visit the local Italian bistro or restaurant. Somehow the spaghetti dinners taste better. Bringing the bistro taste into your kitchen is easier than you may think. With a simple spaghetti recipe we call "Spafetti", your family will asking for seconds and wondering if Chef Giada stopped by.

The Basic Recipe

The best part of Spafetti is you do not have to change your traditional recipe. Make spaghetti with your standard recipe. Our recipe uses one secret ingredient at the end of the cooking process. You do not have to shop for exotic spices or special items. Follow the method you have been using for years. 1) Boil spaghetti, 2) open a jar of sauce and 3) make your dinner. How simple is that?

We promised 5 Star taste. Be patient. The biggest changes to your simple spaghetti recipe is in the whole process. Spafetti requires a few modifications to your preparation process.

  1. Washing the cooked spaghetti
    Many Italian cooks will tell you that washing your spaghetti is a sin. We will not debate this. We find Spafetti tastes better using washed spaghetti.
  2. Heat the spaghetti sauce on low
    There is no secret here. The longer a sauce cooks, the better it tastes. If your spaghetti recipe calls for adding spices, then longer cooking times release more flavors.
  3. Learn to "plate" your spaghetti
    Presenting (often called plating) your spaghetti dinner enhances the appeal. By nature, we eat with our eyes first. If a meal looks delicious, then it will taste delicious.

Secret Ingredient - Feta Cheese

This is where the name Spafetti comes from. Feta cheese adds a unique and wonderful taste to spaghetti. When plated well, the meal looks fabulous.

At first, Feta cheese may not sound like a good culinary choice for spaghetti. Generally, Feta cheese is reserved for salads, chicken recipes and the occasional pizza topping. However, you should try it with spaghetti.

WA LA genius, I love feta, if it weren't for feta cheese I would be vegan. This sounds amazing. Spaghetti is my favorite meal as is my daughters and with feta well sounds a bit like heaven to me, I'M SO HUNGRY NOW!

I've never tried spaghetti with tomato-based sauce and feta cheese, but I do make pasta with a similar type of cheese and I agree it's wonderful. Add to that the taste of a good tomato-based sauce, and I imagine it's all very satisfying. I can already see the ingredients pulling one's taste buds in several different directions at once :).
