My Taco Beef Noodle Casserole
This is an easy but delicious recipe that I just threw together. Some of my recipes I have not even written down. I was hungry for some Tacos but I didn't have any Taco Mix or Shells so I looked around my kitchen to see what I could make and I started to gather items that I thought would be a good substitute. I found that I had the Taco Seasoning in the packets, Noodles, a couple of cans of the Hot Diced Tomatoes and shredded Cheddar Cheese. I always have frozen Ground Beef or Hamburger in my freezer.

I like casseroles because they are easy to fix and not a whole lot of mess with many ingredients. I also don't have a working A/C and try not to add any extra moisture or heat to the house. Most of my recipes are simple and not very expensive. These are good for those who are on a strict budget or just want something simple and good to eat. This is great for left over and does freeze well.
Being that my husband has 2 full time jobs right now I often make a big batch of this and separate it into smaller containers so that my husband and I will have something hot to eat for our lunch and or my dinner. I like to do this for myself since I now eat alone. Well kind of because I have 6 cats and 1 dog, but essentially I eat alone. I want things that are easy to re-heat. Sometimes it's laziness but many times it is that I get so engrossed in my writing that I have little time to think of making something.
My husband often asks where I got the recipe from and I just tell him it was just another one of my creations. I come up with all kinds of different dishes. It seems that I never have what is called for to do any kind of cooking from a cook book or a recipe that I heard or read on the TV ior On-line. I tried to do this several times but I often will have one of the ingredients that the recipe calls for ot all but one of them. I like how resourceful I am when it comes to making due with what I have on hand or in my very small pantry.Most of the time
So here is the recipe that I created from the items that I had in my Kitchen and that was a very yummy and good substitute for tacos.
Taco Beef Noodle Casserole
Prep time 30 min - Total time 60 min
Ingredients for 6 servings
1 lb Ground Beef cooked and drained • 1 12 oz bag of Wide Egg Noodles cooked for 8 minutes • 1 lcan Hunts Diced Tomatoes • 1 can water • 1 package of McCormick'sTaco Seasoning Mix • 1/2 cup diced peppers (can be different colors and hot or mild) • 2 cups Saregneto's Shredded Cheese
Mix all ingredients above except for the cheese. Spray a 9 x 11 casserole dish with cooking spray. Dump the noodle beef mixture into the cassarole dish and sprinkle the cheese on top.
Bake at 350 degrees for 35 minutes.
