Unfolding the Secrets of Gourmet Cheese
@frankbeswick - I am wondering why making cottage cheese took so time. Perhaps, the milk was not hot. For making paneer at home, I use milk at boiling point and then I add either curds or lemon juice. The cheese comes out pretty quickly, ...

Unfolding the Secrets of Gourmet Cheese
@blackspanielgallery - I have never heard of pepperjack before. I will definitely do some research on it. If I find some relevant information, I would perhaps add a text module describing it.

Pepperjack is a cheese of which I have never heard, please tell me more.

Unfolding the Secrets of Gourmet Cheese
I am learning to love cottage cheese, because it's so good for the digestion. My husband convinced me to try cottage cheese with dill on spicy crackers. Not bad at all. I love chedder, swiss, and all of the other cheeses.
