Waffles are such fun to eat, and waffle irons come in a variety of fun shapes, as well as the traditional round or rectangular shapes. Waffle cones are yummy and easy to make, too.

Waffles are such a special breakfast treat, but they're not just for breakfast. You can make a number of dishes using waffles as a base. If you start with waffles shaped like zoo animals or Disney characters, you can build pretty amazing sandwiches with a variety of ingredients. Or you can load the waffles up with veggies in a cheese sauce, or chicken in gravy, or any number of supper dishes.

Yam or Squash Waffles

Yam or Squash Waffles

Try this interesting twist on the waffle. Depending upon what kind of topping you use, this can be part of a main meal or a dessert. Makes 6 large waffles.

Prep time 20 min  -  Total time 20 min
Ingredients for 6 servings
1/2 cup butternut squash or yams, cooked and mashed  • 3 eggs, well beaten  • 1 1/2 cups milk  • 2 T melted butter  • 1 cup flour  • 1/2 t salt  • 2 t baking powder  • 2 T brown sugar  • 1/4 t cinnamon or nutmeg

Add the eggs, milk, and butter to the mashed yams.


Sift the dry ingredients.


Add the dry ingredients to the wet ingredients. Stir only enough to moisten.


Pour into the waffle iron and cook for two minutes or until the light tells you it's done.

Sounds yummy, Marko. I can fruit in the summer/fall so we usually have fruit for toppings, though my husband is a butter and maple syrup fan, so we use both, sometimes at the same time. I like a dollop of plain yogurt on top.

We don't make waffles often but when we do it is usually some winter weekend. We like to eat them with apricot or strawberry jam.

Thanks, Debbie! It really takes less time to make waffles than one would think, especially with a decent waffle iron. I have an old waffle iron, but I'm thinking of getting a shape one for when my grandchildren visit.

Katie, I think that batter container is ingenious. You can even measure your ingredients in it and use it to mix them up. Anything that makes the process less messy gets my vote.
