If you want medium rare, wait a couple of minutes longer. The surprise inside is the blue cheese! This is one of my favorite blue cheese recipes because it's so easy. Try serving these with french fries roasted in the oven.

Stuffed Blue Cheese Burgers
Stuffed Blue Cheese Burgers
  • 1 1/2 lb ground lean beef
  • 2 tsp. Worcestershire sauce
  • A dash of salt and ground black pepper
  • 4 ounces crumbled creamy blue cheese

1. Break the ground beef into chunks in a large bowl. Add the Worcestershire sauce, salt and peper and mix with your hands.
2. Wet your hands and shape the meat into 8 patties, each 1/2" thick. Make an indention in the middle of 4 patties and divide the cheese into 4 portions. Shape the blue cheese into disks and set into the center of each indention. Top the patties with cheese with the remaining beef patties and gently seal the edges. Refrigerate, covered, for 20 minutes to 4 hours.
3. Fire up your gas or charcoal grill. Grill the burgers with the vents open until they reach your desired level of doneness. Do not press the burgers as they cook or the cheese and juices will escape.

Blue Cheese Burgers with Chives

This recipe is always a crowd-pleaser and freezes well so you can make an extra batch and freeze them for a quick grilled meal when time is short. You can also add bacon for a really over-the-top burger. Try this blue cheese recipe for your next family get-together!

  • 3 lbs lean ground beef
  • 4 oz blue cheese, crumbled
  • 1/2 c minced fresh chives
  • 1/4 tea Worcestershire sauce

  • 12 buns

1. Mix the first 7 ingredients together in a large bowl, cover and refrigerate for at least 2 hours.
2. Preheat your gas grill on high and form the mixture into 12 even patties.
3. Oil the cooking grate and grill 5 minutes per side or until they reach your desired level of doneness. Serve on French rolls or hamburger buns.

Blue Cheese Burgers with Dijon Mustard

This is another blue cheese burger recipe that mixes the cheese with the meat. Use a full-fat ground beef for this recipe, not lean, for a really decadent flavor. These burgers are awesome when you serve them on French rolls with just a bit of mayonnaise and some lettuce.

1.  Put all ingredients in a large bowl and mix with your hands. Don't overmix! Shape into 1/2" thick patties that are larger than your bun (the meat will shrink). Cover and refrigerate for 2 hours.
2. Preheat your grill to high and oil the cooking grate. Grill patties for about 5 minutes per side and do not press on the burgers as they cook. Serve on buns.
